Description:

This delicious, creamy, refreshing cucumber salad is a great way to use up tons of cucumbers. It is also a lovely addition to any meal or a great side to bring to any event. With the cooler weather fast approaching, I'm soaking in the last bits of summer by enjoying this salad! An added benefit of this recipe is that it is also low-carb, so if you are looking to watch your carbs while maximizing flavor, this recipe is for you!


Ingredients:

1 8-10 inch garden cucumber

salt

A spoonful of mayonnaise

A spoonful of Greek yogurt

Chopped red onions (pickled or raw)

Fresh or frozen dill

pepper


Directions:

Peel the cucumber. Cut it in half lengthwise and then chop it into 1/4 inch slices. Salt it and let it sit for 30 minutes. Blot dry with a paper towel.

In a bowl, mix the cucumber, mayonnaise, Greek yogurt, red onion, and pepper.

Let marinate in the fridge for a few hours or until ready to eat!


Notes:

Garden dill freezes excellently and can be used fresh all year round. I love to harvest my dill once a year and then store it in the freezer for easy use all year!
